Angelic Cheese Soup

Ingredients
- 1 cup diced carrots
- 1 cup diced celery
- 6 tbsp butter or margarine
- 1 cup finely chopped onion
- 1/2 cup flour
- 2-1/2 tbsp cornstarch
- One 32-ounce can chicken broth
- 1 broth can of milk
- 1/4 tsp baking soda
- Salt
- Pepper to taste
- 1 cup of finely chopped ham
- 1/2 tsp paprika
- 1-1/2 cups shredded sharp cheddar cheese
- 1 tbsp chopped parsley
Instructions
- In a medium saucepan, cook carrots and celery in water until tender; drain.
- In a large soup pot, over medium heat, melt butter and sauté onion until tender, but not brown.
- Stir in flour and cornstarch, then add broth and milk. Stir until smooth and saucy.
- Add all other ingredients and simmer until cheese is melted and well blended.
