Carnitas with Guacamole

Ingredients
- 1 lb pork shoulder or other cut of pork
- Salt to taste
- Pepper to taste
- 3 tbsp chili powder
- 1 tbsp cumin
- 1 cup guacamole
- Fresh cilantro lime wedges, and/or salsa for garnish (optional)
Instructions
- Cut the pork into 1-1/2-inch cubes.
- Place the pork cubes on a shallow, lightly greased baking pan. Sprinkle with salt, pepper, chili powder, and cumin.
- Bake in a 325° oven for 1 hour. Stir now and then, draining excess fat.
- To serve, drain and place on a warmed platter with guacamole and/or salsa. Eat carnitas using toothpicks.
