Ingredients
- 1/2 cup butter
- 1/2 cup raw honey
- 3 tbsp carob powder dissolved in 2 tbsp water
- 1 teaspoon vanilla extract
- 2 whole eggs
- 8 inch cooked pie crust crumb type
Instructions
- Cream butter and honey together.
- Add the dissolved carob and the vanilla.
- Add 1 egg and beat in. Add the other egg and beat until the filling turns from dark brown to a lighter color-about 2 to 3 minutes. If you beat too long at this stage, the filling will start to separate. If this begins to happen, stop beating immediately. It does not affect the taste.
- Turn filling into pie crust. Chill 3 to 4 hours. At serving time, cover with whipped cream.
