Ingredients
- 1-1/2 cups cooked rice
- 1 whole orange peeled and cut into bite size pieces
- 1 cup chopped apple
- 1/2 cup seedless grapes halved
- 1/2 cup plain yogurt
- 1/2 cup mayonnaise or salad dressing
- ¼ cup chutney chopped
- ½ teaspoon curry powder to taste
- 1/8 tsp garlic powder
- 1/8 tsp pepper
- 1 teaspoon milk optional
- 1/2 cup coarsely chopped peanuts
Instructions
- In a mixing bowl combine rice, orange, apple, and grapes. For dressing, combine yogurt, mayonnaise, chutney, curry powder, garlic powder, and pepper. Pour over fruit mixture; toss to coat. Cover and chill for 4 to 24 hours. If necessary, add milk to moisten. Before serving, stir in peanuts.
