Ingredients
- 2 whole heads radicchio cored and thinly sliced
- 1 whole bulb fennel thinly sliced with tops reserved for garnish
- 2 whole Scallions minced
- 2 tablespoon extra-virgin olive oil
- 1/4 cup mayonnaise
- ½ whole lemon juiced
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Toss radicchio, fennel, and scallions together in a large bowl until well mixed. Cover with plastic wrap and refrigerate until ready to dress.
- Whisk oil into mayonnaise in a small bowl, then add lemon juice and salt and pepper to taste.
- To keep slaw from getting soggy, dress salad just before serving -- pour dressing over slaw and toss to mix well. Adjust seasoning to taste and garnish with fennel tops.
