Ingredients
  

  • 2 whole heads radicchio cored and thinly sliced
  • 1 whole bulb fennel thinly sliced with tops reserved for garnish
  • 2 whole Scallions minced
  • 2 tablespoon extra-virgin olive oil
  • 1/4 cup mayonnaise
  • ½ whole lemon juiced
  • 1 pinch salt
  • 1 pinch black pepper

Instructions 

  • Toss radicchio, fennel, and scallions together in a large bowl until well mixed. Cover with plastic wrap and refrigerate until ready to dress.
  • Whisk oil into mayonnaise in a small bowl, then add lemon juice and salt and pepper to taste.
  • To keep slaw from getting soggy, dress salad just before serving -- pour dressing over slaw and toss to mix well. Adjust seasoning to taste and garnish with fennel tops.
