Fillets of Sole Thermidor

Ingredients
- 5 tbsp butter
- 8 each sole or other fillets (about 2 pounds
- 2 tsp salt
- 1/2 tsp seasoned salt
- 1/8 tsp pepper
- 1-1/4 cups milk
- 3 tbsp all-purpose flour
- 1 cup grated Cheddar cheese
- 3 tbsp sherry optional
- 1 dash paprika
Instructions
- Preheat oven to 350°F.
- In 1-quart saucepan, melt 2 tablespoons butter; brush over sole fillets. Sprinkle with salt, seasoned salt and pepper.
- Roll up each fillet and place, seam side down, in 9" by 9" baking dish.
- Pour 1/2 cup milk over fillets; bake in oven 25 minutes or until fish flakes easily when tested with fork.
- Meanwhile, in 2-quart saucepan over medium heat, melt remaining butter. Stir in flour; gradually add remaining milk; cook, stirring, until thickened.
- Reduce heat; stir in cheese and sherry. Preheat broiler if manufacturer directs.
- Spoon liquid from cooked fish. Stir cup liquid into cheese sauce. (If not using sherry use extra 3 tablespoons liquid.)
- Pour cheese sauce over fish; sprinkle with paprika. Broil about 1 minute, just until cheese sauce is slightly golden.
