George and Mary's Spring Fling Vegetable Soup

Ingredients
- 1 small onion sliced and separated into rings
- 3 - 4 stalks celery chopped
- 1 tbsp dried chopped parsley
- 1 tbsp butter or margarine
- 8 cups chicken broth
- 1/4 green bell pepper chopped
- 1 cup shredded cabbage
- 3 medium potatoes peeled and sliced
- 2 medium carrots peeled and sliced
Instructions
- In a heavy soup pot, over medium heat, sauté onion, celery, and parsley in butter, but do not brown.
- Prepare chicken broth as directed on package and pour into pot.
- Add all other ingredients and season to taste. Bring to a boil. Reduce heat and cook, covered, for about 40 minutes, until vegetables are tender.
- Can be served with noodles if desired.
