Ingredients
  

  • 1 small onion sliced and separated into rings
  • 3 - 4 stalks celery chopped
  • 1 tbsp dried chopped parsley
  • 1 tbsp butter or margarine
  • 8 cups chicken broth
  • 1/4 green bell pepper chopped
  • 1 cup shredded cabbage
  • 3 medium potatoes peeled and sliced
  • 2 medium carrots peeled and sliced

Instructions 

  • In a heavy soup pot, over medium heat, sauté onion, celery, and parsley in butter, but do not brown.
  • Prepare chicken broth as directed on package and pour into pot.
  • Add all other ingredients and season to taste. Bring to a boil. Reduce heat and cook, covered, for about 40 minutes, until vegetables are tender.
  • Can be served with noodles if desired.
