Ingredients
- 1 cup unbleached all-purpose flour
- 1 cup semolina flour
- 1/2 cup water
- 1 cup low-fat cottage cheese
- 2 cups flat leaf parsley finely chopped
- 1/4 cup grated Parmesan cheese
- 1/4 tsp grated nutmeg
- 1 dash pepper to taste
- 1/2 cup skim milk
Instructions
- To make pasta dough, mix flours in a medium-size bowl. In center of bowl, make a well in flour. Pour water in middle, slowly adding water to flour. Dough should be soft not sticky.
- When you can form a ball transfer to a lightly floured surface. Knead a few minutes. Wrap dough in waxed paper. Let rest 15 minutes.
- Blend cottage cheese, parsley, Parmesan cheese, nutmeg, pepper and milk in a medium-size bowl.
- Roll out dough to 1/8 inch thick. Drop filling by teaspoonfuls about 2 inches apart over half of dough. Fold over remaining dough, cut in squares and seal.
- Boil in unsalted water until tender, about 5 minutes.
- Cover with favorite sauce and serve.
