Hot Tomato Casserole

Ingredients
- 12 to 15 large tomatoes cut in chunks
- 2 or 3 jalapeño peppers blistered, peeled, and chopped or uncooked chopped jalapeños
- 1 tsp sea salt or to taste
- pepper to taste
- 3 or 4 thick slices of whole wheat bread crumbed
- 1 cup grated cheese
Instructions
- Put all the tomatoes and peppers in a deep saucepan. Bring to a boil. Reduce the heat. Simmer until the tomatoes are reduced to a thick sauce, about 30 minutes.
- Salt and pepper to taste.
- Stir in the bread crumbs.
- Pour the tomato mixture into a 2 quart casserole.
- Bake 30 minutes at 350° or until the mixture is fairly firm and not soupy. Top with grated cheese.
