Ingredients
  

  • a quarter of a lb of small white mushrooms or mushroom stalks
  • 6 eggs
  • butter
  • salt
  • pepper
  • nutmeg or mace
  • flour
  • 2 tbsp of cream

Instructions 

  • Chop the cleaned mushrooms very finely, melt them in butter in a small pan, season with salt, pepper, nutmeg or mace, stir in just a pinch of flour, then 2 tablespoons of cream.
  • When the mixture is very hot, add to the omelette when it is already in the pan.
