Omelette Aux Champignons

Ingredients
- a quarter of a lb of small white mushrooms or mushroom stalks
- 6 eggs
- butter
- salt
- pepper
- nutmeg or mace
- flour
- 2 tbsp of cream
Instructions
- Chop the cleaned mushrooms very finely, melt them in butter in a small pan, season with salt, pepper, nutmeg or mace, stir in just a pinch of flour, then 2 tablespoons of cream.
- When the mixture is very hot, add to the omelette when it is already in the pan.
