Polenta Croutons

Ingredients
- 1/2 tube precooked polenta about 9 oz., cut into 1/2" cubes
- 1 Tbsp. olive oil
- 1 Tbsp. Parmesan
- 1 Tbsp. chopped fresh parsley
- Salt and pepper
Instructions
- 1. Heat oven to 425 degrees. On a parchment-lined baking sheet, toss polenta with oil, cheese, and parsley and season with salt and pepper to taste.
- 2. Bake until golden brown and crisp, flipping halfway through, about 30 minutes.
