Ingredients
- 4 whole flour tortillas
- 4 oz grated low-fat Monterey Jack or Mexican-style cheese about 1 cup
- 15 oz Black beans rinsed, drained
- 4 whole green onions chopped fine
- ΒΌ bunch cilantro chopped
- 1/4 - 1/2 cup salsa roasted garlic
- 1 cup roasted red peppers drained, rinsed and chopped
Instructions
- Heat a large nonstick skillet over medium-high heat for 1 minute. Place a tortilla in the skillet followed by the cheese, peppers, black beans, onions, cilantro, and salsa for the filling. Cut the quesadillas into wedges for serving.
