Ingredients
- 1/4 cup egg substitute
- 1-1/2 cups peeled coarsely grated potatoes
- 1/4 cup finely chopped green onions
- 1 1/2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 tsp dried parsley flakes
- 1/8 tsp dried rosemary leaves
- 1/8 tsp dried sage
- 1/8 tsp pepper
- 1 cup sour cream
- 1 tbsp chopped fresh chives or green onions
Instructions
- In a medium bowl, beat egg substitute until foamy. Stir in grated potatoes, green onions, flour, salt, parsley, rosemary, sage, and pepper. Lightly spray a griddle with nonstick cooking spray and heat to medium. Prepare each pancake by spreading about 1/4 cup of mixture on griddle and cooking each side until golden brown. Drain on paper towels and serve hot with sour cream and chives or green onions.
