Ingredients
  

  • 1/4 cup egg substitute
  • 1-1/2 cups peeled coarsely grated potatoes
  • 1/4 cup finely chopped green onions
  • 1 1/2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 tsp dried parsley flakes
  • 1/8 tsp dried rosemary leaves
  • 1/8 tsp dried sage
  • 1/8 tsp pepper
  • 1 cup sour cream
  • 1 tbsp chopped fresh chives or green onions

Instructions 

  • In a medium bowl, beat egg substitute until foamy. Stir in grated potatoes, green onions, flour, salt, parsley, rosemary, sage, and pepper. Lightly spray a griddle with nonstick cooking spray and heat to medium. Prepare each pancake by spreading about 1/4 cup of mixture on griddle and cooking each side until golden brown. Drain on paper towels and serve hot with sour cream and chives or green onions.
