Ingredients
  

  • 6 oz udon noodles or vermicelli broken in half
  • 1 lb boneless skinless chicken breasts or chicken tenders
  • 2 whole garlic clove minced
  • ½ teaspoon dried red pepper flakes
  • 2 tbsp peanut or vegetable oil
  • ¼ cup chicken broth
  • 2 tbsp creamy peanut butter
  • 2 tbsp soy sauce
  • 3 whole green onions cut diagonally into 1/2-inch pieces
  • 1 teaspoon asian sesame oil

Instructions 

  • Cook noodles according to package directions; drain.
  • While noodles are cooking, cut chicken into 1-inch pieces and toss with garlic and pepper flakes. Heat oil in a large skillet over medium-high heat.
  • Add chicken mixture and stir-fry until chicken is cooked through, about 3 minutes. Add broth, peanut butter, and soy sauce. Cook, stirring constantly, until peanut butter has melted and sauce has thickened. Add green onions, sesame oil, and drained noodles; cook and stir until heated through and noodles are coated with sauce (about 1 minute).
