Ingredients
  

  • 2 tbsp vegetable oil
  • 2 whole Garlic cloves thinly sliced
  • 2 tablespoon shallot 2 shallots thinly sliced
  • 1/2 tsp red curry paste or to taste
  • 1-1/2 lbs long beans cut into 3-inch pieces
  • 1/2 cup vegetable broth or water
  • 3 to 4 whole plum tomato seeded and cut into thin wedges
  • 1 tsp fish sauce
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 3 oz kaffir lime leaf 3 leaves, thinly sliced

Instructions 

  • Heat the oil in a wok or skillet over moderate heat.
  • Add the garlic and shallots and stir until aromatic, about 30 seconds. .
  • Add the curry paste and continue to stir to prevent sticking.
  • Add the long beans and sauté for 1 minute.
  • Add the vegetable broth and reduce heat to low.
  • Cook until beans are almost soft, 3 to 5 minutes.
  • Add the tomatoes, fish sauce, soy sauce, sugar, and lime leaves. Cook for another 2 minutes and remove from heat
