Thai Stir-Fried Long Beans

Ingredients
- 2 tbsp vegetable oil
- 2 whole Garlic cloves thinly sliced
- 2 tablespoon shallot 2 shallots thinly sliced
- 1/2 tsp red curry paste or to taste
- 1-1/2 lbs long beans cut into 3-inch pieces
- 1/2 cup vegetable broth or water
- 3 to 4 whole plum tomato seeded and cut into thin wedges
- 1 tsp fish sauce
- 1 tsp soy sauce
- 1 tsp sugar
- 3 oz kaffir lime leaf 3 leaves, thinly sliced
Instructions
- Heat the oil in a wok or skillet over moderate heat.
- Add the garlic and shallots and stir until aromatic, about 30 seconds. .
- Add the curry paste and continue to stir to prevent sticking.
- Add the long beans and sauté for 1 minute.
- Add the vegetable broth and reduce heat to low.
- Cook until beans are almost soft, 3 to 5 minutes.
- Add the tomatoes, fish sauce, soy sauce, sugar, and lime leaves. Cook for another 2 minutes and remove from heat
