Ingredients
  

  • 4 to matoes cored and cut into wedges
  • 4 cups cubed watermelon about 1 1/2 lb.
  • 1/3 cup balsamic vinaigrette
  • Salt and pepper
  • 5 oz. baby arugula about 5 lightly packed cups
  • 1 cup crumbled feta cheese
  • 3 Tbsp. chopped fresh mint

Instructions 

  • 1. Combine tomatoes and watermelon in a large bowl and drizzle with vinaigrette; season with salt and pepper to taste, then toss until evenly coated.
  • 2. Gently fold in arugula, then sprinkle with feta and mint and serve.
