Tomato and Watermelon Salad with Feta

Ingredients
- 4 to matoes cored and cut into wedges
- 4 cups cubed watermelon about 1 1/2 lb.
- 1/3 cup balsamic vinaigrette
- Salt and pepper
- 5 oz. baby arugula about 5 lightly packed cups
- 1 cup crumbled feta cheese
- 3 Tbsp. chopped fresh mint
Instructions
- 1. Combine tomatoes and watermelon in a large bowl and drizzle with vinaigrette; season with salt and pepper to taste, then toss until evenly coated.
- 2. Gently fold in arugula, then sprinkle with feta and mint and serve.
