Vegetarian Fried Noodles

Ingredients
- 2 tbsp vegetable oil
- 1 whole garlic clove chopped
- 1 whole onion sliced
- 2 whole red chili peppers seeded and sliced thin
- 1 whole carrot shredded
- 8 oz. bean sprouts
- 1 dash salt
- 1 dash black pepper
- 8 oz rice noodle vermicelli variety
- 2 tbsp soy sauce
- 1 whole green onions chopped fine for garnish
Instructions
- Heat oil in a wok or frying pan and stir-fry garlic and onion 1 minute or until softened.
- Add the chiles and carrot shreds and cook, stirring, 2 minutes, then add the bean sprouts, salt and pepper. Blend well and stir-fry 2 minutes.
- Add the rice vermicelli with the soy sauce, mix and toss, then cook 2 - 3 minutes. Garnish with shredded green onion and serve at once.
