White Bean, Tomato, and Goat Cheese Pizza

Ingredients
- 2 tsp olive oil
- 1 whole Garlic clove minced
- 1 cup cooked white beans such as Great Northern beans or navy beans
- 3 tbsp coarsely chopped fresh cilantro or flat-leaf parsley
- 1 dash salt to taste
- 1 dash black pepper to taste
- ½ pkg dough pizza dough
- 1 ½ cups tomato sauce
- 2 oz goat cheese cut or crumbled into 1/2-inch pieces
Instructions
- Heat the olive oil in a nonstick skillet. Add the garlic and cook over medium heat for 1 minute, or until fragrant but not brown. Stir in the beans, half the cilantro, and salt and pepper to taste. Cook the beans for 3 minutes or until well flavored.
- Roll out the pizza dough to form an 11-inch circle and pleat the edges. Spread the tomato sauce on top. Top the pizza with the beans and goat cheese and sprinkle with the remaining cilantro.
- Bake the pizza for 10 to 15 minutes, or until nicely browned. Cut into wedges and serve.
