Whole Wheat and Raisin Griddle Scones

Ingredients
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 tbsp sugar
- 2 tsp baking powder
- 3/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/4 c. safflower oil
- 3/4 cup buttermilk or 3/4 c. skim milk plus 2 tsp lemon juice or white vinegar
- 1/2 cup raisins
Instructions
- In a large bowl, mix together flours, sugar, baking powder, salt, baking soda, and cinnamon.
- With a fork, cut in oil until the mixture resembles coarse crumbs.
- Stir in buttermilk and raisins just until moistened.
- With floured hands, pat dough onto a floured cutting board or countertop, forming a circle 9 inches in diameter and 1/2 inch thick.
- Cut the dough circle into eight wedges and pull apart.
- Fry wedges on a lightly oiled or nonstick-sprayed frying pan (you can also add a light coating of flour to further prevent sticking). Cook over low to medium heat for about 5 minutes or until the undersides are golden brown. Flip scones over and cook 4 to 5 minutes longer.
- Serve warm with jam or peanut butter if desired.
